I’ve noticed that a staple snack always served during tea at a childcare centre is pancakes – mini ones that is. And they usually are good, very good in fact. So one day I bugged the “aunty” at my workplace to give me her recipe. By the way, this aunty also makes the best (in my opinion) chili crab ever.

Aunty Chan’s pancakes are light and fluffy with a tinge of sweetness. They are highly addictive too and are delicious with or without honey/maple syrup.

Aunty Chan’s Pancakes

Makes about 12-15 medium sized pancakes and probably 20-30 small ones.


  • 2 cups plain flour
  • 2 cups milk
  • 4 tablespoons sugar
  • 3 tablespoons melted butter (Aunty doesn’t usually melt it and add it in though)
  • 3 teaspoons baking powder
  • 1 teaspoon vanilla essence
  • 1 egg


  1. Mix the wet ingredients and dry ingredients separately and combine. Do not overmix the batter. You can also let the better rest for a bit before frying.
  2. Heat pan or griddle on medium high heat. Spoon batter onto pan and cook first side till you see bubbles forming. Flip and cook the other side.
  3. Serve with honey or maple syrup. Great with eggs, bacon, fruit etc. The pancakes keep well and when reheated are also light and fluffy!
